Glazed Game Hens

6 Rock Cornish game hens
2 1/2 teaspoons grated orange peel
2 cups orange juice
2 tablespoons cornstarch
3 tablespoons soy sauce
1/2 teaspoon crushed red pepper

Remove giblets from hens and save for another use.
Rinse birds and pat dry. Place birds breast side up in a
shallow 12 x 15" pan. Mix orange peel, juice, cornstarch,
soy sauce, and crushed red pepper. Pour evenly over birds.
Bake in 450 degree oven, basting every 10 to 15 minutes
until meat is no longer pink at thigh bone, 30 to 40 minutes.
Place birds on warm plates. Skim fat from sauce, pour into
gravy boat and serve with birds.
