The Best Banana-Nut Bread

8 servings
cups ripe bananas, mashed
cup vegetable oil
teaspoon vanilla
cups flour
cup sugar
teaspoon baking soda
1/4  teaspoon salt
1/2  cup chopped walnuts, or pecans

Combine banana, eggs, oil, vanilla and walnuts and mix well.
Sift together flour, sugar, soda, and salt and add to banana mixture.
Pour batter into greased and floured 9 x 5 inch loaf pan
(or two smaller loaf pans). Or fill prepared muffin pans 3/4 full.
Bake at 350 for about 50 minutes for loaf or about 20 - 25 for
muffins or until tester comes out clean.
