German Prune Cake



11 ounces flour
1 1/2 sticks butter
1 tsp salt
3 pounds fresh prunes
2 eggs
8 ounces whipping cream
1 TBS Sugar
dash of cinnamon
1 tsp vanilla



Crust: Put flour, butter and salt in bowl, work with fork to mix together. Add warm water and mix to consistency. Spread in bottom of 10-12 Spring-form cake pan and make a high lip (about ¼ above level of floor of dough) with dough around edge of pan. Puncture dough with fork prior to baking.

Bake at 400 degrees for 10 minutes. Remove and allow to cool.

Put cut prunes, cut side up on top of cooled crust.

Topping: Beat eggs, add sugar, cinnamon and vanilla and beat. Then add whipping cream and stir.

Pour over the prunes (fill all of the cavities) and bake at 400 degrees for 40 minutes.

Cool, remove from Spring-Form pan and enjoy. Delicious warm or cold with whipped cream or ice cream.
