2 | cups ripe bananas, mashed |
3 | eggs |
1 | cup vegetable oil |
1 | teaspoon vanilla |
2 | cups flour |
1 | cup sugar |
1 | teaspoon baking soda |
1/4 | teaspoon salt |
1/2 | cup chopped walnuts, or pecans |
Combine banana, eggs, oil, vanilla and walnuts and mix well.
Sift
together flour, sugar, soda, and salt and add to banana mixture.
Pour batter
into greased and floured 9 x 5 inch loaf pan
(or two smaller loaf pans).
Or fill prepared muffin pans 3/4 full.
Bake at 350 for about 50 minutes
for loaf or about 20 - 25 for
muffins or until tester comes out clean.
