Perfect Pickled Peaches

 

 

1/2 cup cider vinegar
1/3 cup sugar
1/4 teaspoon ground ginger
1 (3-inch) cinnamon stick
1/8 teaspoon ground cloves
3 large firm peaches, peeled, seeded and quartered

 

Combine vinegar, sugar, and speices in a heavy saucepan; bring to a boil.

Reduce heat and simmer, uncovered, 5 minutes. Add peaches; return to a boil. Reduce heat, and simmer 10 minutes.

Let stand 30 minutes. Serve peaches warm or chilled.
