Rosemary Jelly

 

 

4 to 6 sprigs fresh rosemary, about 2-3"
1 1/4 cups boiling water
1/4 cup white vinegar
3 cups sugar
3 to 5 drops food color, red, optional but nice
3 ounces liquid, pectin, (powdered doesn't work)

 

 

Pour boiling water over rosemary. Cover and let steep 15 minutes. Strain. Measure 1 cup of the infusion and put into saucepan. Stir in vinegar and sugar. Bring to a rolling boil over high heat (rolling boil = continues boiling even when you stir). Add food coloring if using and pectin\pectin, stirring constantly. Bring to boil again and boil 1 minute. Remove from heat, skim foam and ladle into hot, sterilized jelly glasses. Seal with paraffin wax or process in boiling water bath according to manufacturers directions using band and seals.
