Goat Cheese Tart

 

 

3 ounces goat cheese, crumbled
1 tablespoon olive oil
1 teaspoon minced fresh thyme or 3/4 teaspoon dried
1 9-inch baked pie crust
1 large egg
1 egg yolk, lightly beaten
3/4 cup half and half
1/4 teaspoon salt
1/4 teaspoon pepper

 

Combine first 3 ingredients in a small bowl. Spread in bottom of pie crust. Combine egg and remaining 4 ingredients. Pour over cheese mixture.

Bake at 350 degrees for 30 to 35 minutes or until mixture is set and lightly browned. Shield with aluminum foil to prevent overbrowning of crust if necessary.
