Mock Hollandaise Sauce

 

 

1/2 cup reduced calorie mayonnaise
3 Tablespoons water
1 Tablespoon lemon juice
1/8 teaspoon white pepper

 

Combine all ingredients in a small saucepan; stir with a wire whisk until smooth. Cook mixture over low heat, stirriing constantly, 3 to 4 minutes or until thoroughly heated.
Serve warm.

makes 3/4 cup

Excellent for eggs benedict!
