Roasted Garlic Hummus



1 head of garlic
1 can garbanzo beans rinsed and drained
2 Tablespoons lemon juice
Salt & Pepper


Cut garlic head in 1/2 crosswise, rub cut surface with a little of the olive oil. Place garlic head halves, cut side down, in an 8 or 9 inch pie pan, cover tightly with foil. Bake in 400 degree oven until garlic is soft, about 40 minutes. Squeeze garlic cloves from skin, discard skins. In blender or food processor, combine all ingredients, adding salt & pepper to taste.

Serve with crackers, pita chips, seeded breadsticks or iced veggies.
