Steak au Poivre



  • 2 teaspoons peppercorns, crushed
  • 2 strip steaks, about 1 inch thick, boneless
  • 1 tablespoon peanut oil
  • 1/2 teaspoons salt
  • 2 Tablespoon brandy
  • 1/4 cup worcestershire sauce
  • 3 tablespoons unsalted butter

Press crushed pepper evenly into both sides of each steak and set aside for 15 minutes. Pour peanut oil into a large skillet over high heat. When hot, place steaks in skillet, and cook for about 3 minutes a side for medium rare, or to your liking, turning once. Sprinkle with salt, and remove to a cutting board. Pour brandy into skillet and bring to a boil. Add worcestershire sauce. Remove from heat and stir in butter.
Cut steaks into 1/4 inch thick slices and arrange on plates. Pour sauce over slices and serve.
